Menu Plan Monday – Week 4

Last Week

We did pretty well last week.  I didn’t make it food shopping until Saturday, so that hurt us some.  We did a couple nights of take out, but we are hoping for a better week this week.  We are pretty well stocked and I have the week planned out.  Now I just need to stick to it.  Then again, I’m not really sure what to make at the end of the week.  I’m open to suggestions!

This Week

Monday

Breakfast – Cereal and Yogurt

Lunch – Pasta Salad

Dinner – Breakfast for dinner, eggs and Southwestern Hashbrowns (I accidentally bought them instead of the regulars)

Tuesday

Breakfast – Muffins

Lunch – Mini Pizzas

Dinner – Ravioli and Sauce, Garlic Bread and Tomato Mozzarella Salad from Cooking w/ Mickey

Wednesday

Breakfast – Cereal and fruit

Lunch – Sandwiches

Dinner – Chicken (don’t know what kind), rice and veggie

Thursday

Breakfast  – Yeast Waffles

Lunch – Black Bean Salad (Didn’t make it last week)

Dinner – Burgers (for the meat eaters), Potato Salad, Veggie

Friday

Breakfast – Leftovers

Lunch – Leftovers

Key Lime Pie  from Olivia’s Café – Disney’s Old Key West Resort (have never eaten or stayed here)  If I can find key lime juice.

Squeaker

I make all of my sons food in addition to our family menu.  I did the same for my daughter.  I thought I would share what he is eating this week too.

Menu Plan Monday – Week 3

Last (3) Week(s)

A couple weeks ago Peanut, Squeaker and I went to visit my parents.  We planned to be there for 2 weeks.  Hurricane Irene came and lengthened our trip by a couple days.  I spent the rest of last week trying to get back to normal around the house.  I’m hoping that this week’s upcoming menu will help with that too.

This Week

This is a Buying Club week, so I will be getting a great box of fresh produce tomorrow.  I have a long list for the grocery store and am hoping to get their in the early part of the week.  I do need to make a loaf of bread to get us through the week too.  Hoping to get that done on Monday when I make the rolls for dinner.

Monday

Breakfast – Whatever I dig out of the freezer

LunchMacaroni and Cheese with Broccoli

Dinner – Sloppy Joes, Whole Wheat Rolls, Tater Tots

Tuesday

Breakfast – Banana muffins (trying to use up  the overripe bananas before they completely turn to the dark side.)

Lunch – Sandwiches

Dinner – Farmer’s Market Pasta with Corn and Tomatoes (from The Six O’clock Scramble)

Wednesday

Breakfast – Cereal and fruit

LunchPasta, Pesto and Cheese

DinnerTuna Zucchini Patties, Yellow or Purple beans, sweet potato fries

Thursday

Breakfast  – Yeast Waffles

Lunch – Black Bean Salad (I am now addicted to this salad)

Dinner – Kebabs (for the meat eaters), Broccolini, Rice (some sort of substitute for the non-meat eater)

Dinner – Black Bean Soup with Johnny Cakes (from Cooking with Mickey), Salad

For Me Friday

My New Year’s resolution this year was to find something to do for me.  So far, I’ve been trying, but haven’t really found anything specific to do just for me.  I’m going to keep working on it.

As I said a few posts ago, I started blogging again to help hold myself accountable.  For some reason, I feel that if I tell people, albeit a very small group of people, what I am planning to do, I might be more likely to do it.  My plan is to write about what I would like to do for me, and if I do it or not.  So from week to week, I will post how I plan to take some time for me.

Over the next week, I hope to:

  • Read a book.  (Okay, make that finish the book I started 2-3 weeks ago.)
  • Take a walk (or several).  Even if I have the kids with me, I want to get some sort of exercise in.
  • Find a healthy and really tasty dessert.
  • Oh and create a blog signature and figure out how to use it on WordPress.

Menu Plan Monday – Week 2

Last Week

Last week was a bust.  I spent most of the week dealing with our invasion, and all of my plans to make healthy meals for my family didn’t happen.  I am really frustrated, but hoping that we can get back into the swing of things this week.  This is going to be a shortened version of what I would really like to post, but as I’m still trying to get my house in order, I don’t have everything planned out.

Here is my other addition to our meal planning.  I am going through Disney withdrawal and have decided that once a week I would like to make a recipe from Disney to help with my symptoms.  I am also hoping to find a recipe a week out of Molly Katzen’s Pretend Soup and Other Real Recipes.  

This Week

My hope for this week is that I can cook out of the pantry and freezer this week.  After last week, I’d like to get us back on budget by not spending a ton of money at the grocery store.  I do get a delivery from my Organic Buying Club this week.  Yea!  Fresh produce!  I’m hoping that will help us out.

Monday

Dinner Beef Back Ribs since I didn’t make them last week.

Tuesday

Dinner – Breakfast for dinner.  Not really sure what.  Maybe Zucchini Feta Pancakes from the Moosewood Cookbook.

Wednesday

Dinner – Aloo Gobi (if the cauliflower I have is still good; if not maybe a vegetarian korma) and Naan.  Indian sounds really good.  I’m not sure which recipe I’ll use for dinner, but I will post it next week.

Thursday

Dinner – Chicago Style Deep Dish Pizza with Spinach.  The crust is already in the freezer from the last time I made one.

Friday

Dinner – We’ll try to do this again this week.  Chicken, probably Panko Crusted Chicken with Cherry Tomato Sauce, pasta and salad (If I’m really on my game, we’ll have a challah too.)

Saturday

Not sure, but my mom is in town :-).  Maybe Palo’s Grill Portobello Mushrooms and Polenta fromCooking with Mickey and the Disney Chefs.

Sunday

Not sure….

Aloha Friday: Getting Back into the Swing…

This has been a week of trying to get things back together for me.  I decided to start blogging again, and have a house I have to put back together.  As we were invaded this week.  Currently, I am trying to put my house back together.  To do this I am trying to follow the FlyLady and her great strategies that make “straightening” part of every day life.  I’m having a tough time getting going as I’m still a little overwhelmed by everything that has to be done.  I’m looking for inspiration.

My question is:

What do you do to help you conquer the more daunting tasks in your house?

Menu Plan Monday – Week 1 “in progress”

I’m back!  It’s been over a year since I’ve joined in Menu Plan Monday and then it was with my past blog, Jolly Green Mommy.  I am hoping to make the majority of the meals my family eats and to keep us to a reasonable budget doing it.

Just to give you a little background on my family, we are Kosher.  This means we do not eat pork or shellfish.  In addition (and probably the harder part), we do not combine meat and dairy.  I am a vegetarian, well I guess technically a pescitarian as I eat fish.  When we go out, my husband normally goes for chicken and meat because I do not often cook them at home.  Oh right, then we have my 3-year-old, Peanut, who though not a picky eater is becoming stingier with eating the meals I make.  (She eats what we eat, I do not make her anything special.)  There is also my 5 1/2 month old son, Squeaker.  He is just starting to eat solid food, as the doctor gave us the go ahead at our last appointment.  My objective is to cook more of this, or at least more foods that he finds satisfying to keep us eating at home more often.  In the past, we have gone way over budget with eating out.

Now for what I hope to do every week.  I will try to review what we ate, and if it was well received, by Fireman and Peanut.  I will also talk about what Squeaker is eating as I make his food too.

Last Week

As this is the first week, I’m back at this, I will say that we did a good job of eating at home last week.  I made a London Broil using using this recipe from A Year of Slow Cooking.  My husband liked this and the meat fell apart when I cut it into strips.  On the other hand, Paula Deen’s Squash Casserole was not a big hit.  I thought it wasn’t bad, but no one else liked it much.

This Week

Monday

Breakfast – Leftover Cherry Clafouti (Alton Brown’s recipe); I think Peanut would have eaten ALL of this yesterday if I let her.

Lunch – Sandwiches; either Turkey or Tuna

Dinner – some variation of Mexican Lasagna; Tomato & Avocado Salad

Tuesday

Breakfast – A baked good with cherries (haven’t decided what yet.)

Lunch

DinnerTilapia Meunier; Rice Pilaf and Spinach

Wednesday

Breakfast – Cereal and fruit

Lunch

DinnerBeef Back Ribs  (I’m using a recipe for regular ribs.  We’ve never made or had these before so it should be interesting); Potatoes, and a vegetable (Gardein beefless tips for me)

Thursday

Breakfast – Muffins?

Lunch –

Dinner – Cottage Cheese Pancakes
